Alpha-amylase begins the process of starch digestion. It takes starch chains and breaks them into smaller pieces with two or three glucose units., maltose and maltotriose. Alpha Amylase's official name is 1,4-a-D-Glucan glucanohydrolase. The modern history of enzymes began in 1833, when French chemists Anselme Payen and Jean-François Persoz isolated an amylase complex from germinating barley and named it "diastase".
